As you mentioned, if you had Freeride on the left and Race on the right as a guideline- then it would be from the left Gecko/Blast/Jag in terms of ease of use/planing/intermediate/comfort on the left (Gecko), moving to the right with more speed/tighter gybes/narrower overall shape (Blast) and then all the way on the right, the Jag with best top speed, wider/earlier planing outline, good control, but mainly straight line oriented.
Then you also need to not only look at volumes, but also the widths - Jag and Gecko both thinner, wider shapes with planing as a key factor on both. Whilst Blasts are narrower/straighter outlines and manoeuvres/fun sailing is key.
I would actually go for the Blast 130 to match those sails (70cm wide but still feels like a small board). Can handle 5.9-8.4, have used those sails, including a 9.0 on it actually. Gecko I would say for someone using a FreeWave, might be a bit tame. Jag is also a good option in 125L (75cm wide) if you want to have more speed than the Blast, but less manoeuvres. Will fit the 7.0 nicely, the 5.9 is not perfect but will work too.
